How many restaurants does Marcus Waring have? Waring began his career as a commissary chef at the Savoy Hotel in 1988, when he was just 18 years old. He left the hotel in 1993 to work for Albert Roux at the Michelin-starred Le Gavroche, where he first met Gordon Ramsay. Later there were stains at Gravity Manor in Sussex, Amsterdam and other restaurants in New York City. Wearing Gordon Ramsay joined Aubergine when it opened in 1993. L’Oranger Wareing’s former cook, Kemmel Benamer, was reinstated as the new head chef after AZ Restaurants launched legal proceedings against the pair. Ramsay and Waring worked together to open Petrus in 1999, with Waring becoming head chef and operating the restaurant on behalf of Gordon Ramsay Holdings (GRH) at 33 St James Street, London. The legal case ended with the payment of an out-of-court settlement by Ramsay and Waring to AZ. The French wine Petrus, a favorite of Ramsay and Waring, was the inspiration for the name.
