Adam Jackson was the chef when The Black Swan’s restaurant first received a Michelin star in 2012. Jackson left The Black Swan in June 2013 to open his own restaurant, and Banks replaced him as the restaurant’s head chef. When the restaurant held its Michelin star that year, Banks, 24, became the youngest chef to do so.

On a farm next to the restaurant, the family built a three-acre kitchen garden in 2013. Along with the garden, Banks was able to grow exclusively their own food and serve ingredients that were not available elsewhere, such as crappoudine beets, black truffle potatoes, and wineberries.
